Our first stop is Colonia Caroya, a place founded by Italian immigrants that still preserves the charm of its roots and a strong culinary identity, famous for its exquisite artisanal salamis. There, we visit the emblematic Jesuit Estancia Casa de Caroya, a building steeped in history that served as a summer residence for students of the traditional Colegio Monserrat.
We continue to Jesús María, a city that beats to the rhythm of Creole culture, nationally recognized for its Doma and Folklore Festival. There, we explore the majestic Jesuit Estancia San Isidro Labrador, a jewel of the Jesuit legacy and the cradle of viticulture in the region, connecting us with the origins of a winemaking tradition that continues to thrive.
